3rd Recipe : Polish Vegetable Salad (Sałatka Jarzynowa)

Dear Latvian Students here is Polish traditional Vegetable Salad which is served on Easter Day. Polish people like it and often eat also at Christmas time. It is easy to do.


Ingredients:


3–4 potatoes

2 carrots

1 parsley root (optional)

1/4 celery root

4 eggs

4–5 pickles (sour cucumbers)

1 small onion

1 cup peas (canned, drained)

3–4 tablespoons mayonnaise

Salt and pepper to taste


Instructions:


1 Peel the potatoes, carrots, parsley root, and celery root. Boil them until soft, then let them cool.

2 Boil the eggs until hard, cool, peel, and dice.

3 Dice the cooked vegetables into small cubes.

4 Finely chop the pickles/sour cucumbers and onion.

5 Put all ingredients into a large bowl, add peas and eggs.

6 Add mayonnaise, salt, and pepper.

7 Mix everything well and put in the fridge for at least 1–2 hours before serving.
